Mix together the eggs, sugar, carrots,
courgettes and oil. Stir in the flour, baking powder and mixed spice
and mix to a smooth batter. Spoon into a greased and lined 23 cm/9 in
cake tin (pan) and bake in a preheated oven at 180°C/350°F/gas mark 4
for 30 minutes until a skewer inserted in the center comes out clean.
Leave to cool, then spread with cream cheese icing.
