Gooey Cinnamon Bars Recipe

Ingredients: Makes 16

225 g/8 oz/2 cups plain (all-purpose) flour
10 ml/2 tsp baking powder
225 g/8 oz/1 cup soft brown sugar

15 ml/1 tbsp melted butter

250 ml/8 fl oz milk

30 ml/2 tbsp demerara sugar

10 ml/2 tsp ground cinnamon
25 g/1 oz/2 tbsp butter, chilled and diced


Mix together the flour, baking powder and sugar. Stir in the melted butter and milk and blend together well. Press the mixture into two 23 cm/9 in square cake tins (pans). Sprinkle the tops with the demerara sugar and cinnamon, then press pieces of butter over the surface. Bake in a preheated oven at 180C/350F/ gas mark 4 for 30 minutes. The butter will make holes in the mixture and go gooey as it cooks.
