Gooey Cinnamon Bars Recipe

Ingredients: Makes 16

225 g/8 oz/2 cups plain (all-purpose) flour
10 ml/2 tsp baking powder
225 g/8 oz/1 cup soft brown sugar

15 ml/1 tbsp melted butter

250 ml/8 fl oz milk

30 ml/2 tbsp demerara sugar

10 ml/2 tsp ground cinnamon
25 g/1 oz/2 tbsp butter, chilled and diced

Method:

Mix together the flour, baking powder and sugar. Stir in the melted butter and milk and blend together well. Press the mixture into two 23 cm/9 in square cake tins (pans). Sprinkle the tops with the demerara sugar and cinnamon, then press pieces of butter over the surface. Bake in a preheated oven at 180°C/350°F/ gas mark 4 for 30 minutes. The butter will make holes in the mixture and go gooey as it cooks.
