Apple and Blackcurrant Crumble Bars Recipe

Ingredients: Makes 12

175 g/6 oz plain (all-purpose) flour
5 ml/1 tsp baking powder

A pinch of salt
175 g/6 oz butter or margarine

225 g/8 oz/1 cup soft brown sugar

100 g/4 oz/1 cup rolled oats

450 g/1 lb cooking (tart) apples, peeled, cored and sliced
30 ml/2 tbsp cornflour (cornstarch)

10 ml/2 tsp ground cinnamon

2.5 ml/0.5 tsp grated nutmeg

2.5 ml/0.5 tsp ground allspice

225 g/8 oz blackcurrants

Method:

Mix the flour, baking powder and salt, then rub in the butter or margarine. Stir in the sugar and oats. Spoon half into the base of a greased and lined 25 cm/9 in square cake tin (pan). Mix the apples, cornflour and spices and spread over. Top with the blackcurrants. Spoon over the remaining mixture and level the top. Bake in a preheated oven at 180C/350F/gas mark 4 for 30 minutes until springy. Leave to cool, then cut into bars.
