Apricot Squares Recipe

Ingredients: Makes 12

50 g/2 oz butter or margarine

175 g/6 oz/1 small can evaporated milk
15 ml/1 tbsp clear honey

45 ml/3 tbsp apple juice
50 g/2 oz soft brown sugar
50 g/2 oz sultanas (golden raisins)
225 g/8 oz ready-to-eat dried apricots, chopped
100 g/4 oz/1 cup desiccated (shredded) coconut
225 g/8 oz/2 cups rolled oats

Method:

Melt the butter or margarine with the milk, honey, apple juice and sugar. Stir in the remaining ingredients. Press into a greased 25 cm/12 in baking tin (pan) and chill before cutting into squares.
