This delicious muffin is simple and quick to make.<\/span><\/p>\n<p><strong>Ingredients:<\/strong> (Makes 8)<\/p>\n<ul>\n<li>225 g\/scant 1\u00be cups all-purpose (plain) flour<\/li>\n<li>1 teaspoon baking powder<\/li>\n<li>Pinch of salt<\/li>\n<li>150 g\/\u00be cup golden superfine (caster) sugar<\/li>\n<li>Zest of 1 lemon<\/li>\n<li>5 tablespoons milk<\/li>\n<li>2 eggs<\/li>\n<li>140 g\/5 oz unsalted butter, melted<\/li>\n<li>2 tablespoons lemon juice<\/li>\n<li>3 tablespoons good-quality lemon curd<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<p>Preheat the oven to 200\u00b0C\/400\u00b0F\/Gas 6. Place nine large paper cases in a deep muffin tray. Sift the flour, baking powder and salt into a mixing bowl. Add the sugar and lemon zest and combine.<\/p>\n<p>Place the milk, eggs and melted butter in a separate bowl and whisk until combined. Gradually add the milk mixture to the flour, stirring gently. Add the lemon juice and mix gently until combined.<\/p>\n<p>Spoon a heaped dessertspoonful of the muffin mixture into the paper cases, then top each one with a teaspoonful of lemon curd.
