Drizzle with single cream for extra luxury.<\/span><\/p>\n<p style=\"margin-top: 0; margin-bottom: 0;\"><span style=\"font-family: Verdana; font-size: small;\"><b>Ingredients:<\/b> (Serves 8)<\/span><\/p>\n<ul>\n<li><span style=\"font-family: Verdana; font-size: small;\">3 eggs<\/span><\/li>\n<li><span style=\"font-family: Verdana; font-size: small;\">175 g\/6 oz butter, softened<\/span><\/li>\n<li><span style=\"font-family: Verdana; font-size: small;\">175 g\/6 oz caster sugar<\/span><\/li>\n<li><span style=\"font-family: Verdana; font-size: small;\">175 g\/6 oz cups self-raising flour<\/span><\/li>\n<li><span style=\"font-family: Verdana; font-size: small;\">50 g\/2 oz\/\u00bd cup ground almonds<\/span><\/li>\n<li><span style=\"font-family: Verdana; font-size: small;\">1.5 ml\/\u00bc teaspoon freshly grated nutmeg<\/span><\/li>\n<li><span style=\"font-family: Verdana; font-size: small;\">50 g\/2 oz\/5 tablespoons candied lemon peel, finely chopped<\/span><\/li>\n<li><span style=\"font-family: Verdana; font-size: small;\">Grated rind of 1 lemon<\/span><\/li>\n<li><span style=\"font-family: Verdana; font-size: small;\">30 ml\/2 tablespoons lemon juice<\/span><\/li>\n<li><span style=\"font-family: Verdana; font-size: small;\">Poached pears, to serve<\/span><\/li>\n<\/ul>\n<p style=\"margin-top: 0; margin-bottom: 0;\"><b><span style=\"font-family: Verdana; font-size: small;\">For the syrup:<\/span><\/b><\/p>\n<ul>\n<li><span style=\"font-family: Verdana; font-size: small;\">175 g\/6 oz caster sugar<\/span><\/li>\n<li><span style=\"font-family: Verdana; font-size: small;\">Juice of 3 lemons<\/span><\/li>\n<\/ul>\n<p style=\"margin-top: 0; margin-bottom: 0;\"><b><span style=\"font-family: Verdana; font-size: small;\">Method:<\/span><\/b><\/p>\n<p style=\"margin-top: 0; margin-bottom: 0;\"><span style=\"font-family: Verdana; font-size: small;\">Preheat the oven to 180\u00b0C\/350\u00b0F\/Gas 4. Grease and base-line a deep, round 20 cm\/8 inch cake tin. Place all the cake ingredients in a large bowl and beat well for 2-3 minutes, until the mixture is light and fluffy.<\/span><\/p>\n<p style=\"margin-top: 0; margin-bottom: 0;\"><span style=\"font-family: Verdana; font-size: small;\">Tip the mixture into the prepared tin, spread level and bake for 1 hour, or until golden and firm to the touch.<\/span><\/p>\n<p style=\"margin-top: 0; margin-bottom: 0;\"><span style=\"font-family: Verdana; font-size: small;\">Meanwhile, make the syrup. Put the sugar, lemon juice and 75 ml\/5 tablespoons water in a pan. Heat gently, stirring until the sugar has dissolved, then boil, without stirring, for 1-2 minutes.<\/span><\/p>\n<p style=\"margin-top: 0; margin-bottom: 0;\"><span style=\"font-family: Verdana; font-size: small;\">Turn out the cake on to a plate with a rim. Prick the surface of the cake all over with a fork, then pour over the hot syrup. Leave to soak for about 30 minutes.
