{"id":406,"date":"2014-10-10T11:21:16","date_gmt":"2014-10-10T15:21:16","guid":{"rendered":"http:\/\/www.allbakingrecipes.com\/recipes\/?p=406"},"modified":"2014-10-10T11:21:16","modified_gmt":"2014-10-10T15:21:16","slug":"ice-cream-sandwich-recipe","status":"publish","type":"post","link":"https:\/\/www.allbakingrecipes.com\/recipes\/ice-cream-sandwich-recipe\/","title":{"rendered":"Ice Cream Sandwich Recipe"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-407\" src=\"https:\/\/www.allbakingrecipes.com\/recipes\/wp-content\/uploads\/2014\/10\/ice-cream-sandwich.jpg\" alt=\"Ice Cream Sandwich Recipe\" width=\"300\" height=\"250\" \/><\/p>\n<p><span style=\"font-family: Verdana; font-size: small;\">These are great when you get those midnight munchies &#8211; either keep the cookies separately in an airtight cookie jar and sandwich only together each time with the softened ice cream of your choice when required or make the sandwiches complete with ice cream and coating and then freeze until required.<\/span><\/p>\n<p><span style=\"font-family: Verdana; font-size: small;\"><b>Ingredients:<\/b> (Makes 12)<\/span><\/p>\n<ul>\n<li><span style=\"font-family: Verdana; font-size: small;\">115 g\/4 oz\/\u00bd cup unsalted (sweet) butter, at room temperature, diced<\/span><\/li>\n<li><span style=\"font-family: Verdana; font-size: small;\">115 g\/4 oz\/generous \u00bd cup caster (superfine) sugar<\/span><\/li>\n<li><span style=\"font-family: Verdana; font-size: small;\">1 egg, beaten<\/span><\/li>\n<li><span style=\"font-family: Verdana; font-size: small;\">200 g\/7 oz\/1\u00be cups plain (all-purpose) flour<\/span><\/li>\n<li><span style=\"font-family: Verdana; font-size: small;\">25 g\/1 oz\/\u00bc cup (unsweetened cocoa powder, sieved<\/span><\/li>\n<li><span style=\"font-family: Verdana; font-size: small;\">Ice cream, to fill<\/span><\/li>\n<li><span style=\"font-family: Verdana; font-size: small;\">Toasted nuts, biscuit (cookies) crumbs, to coate<\/span><\/li>\n<li><span style=\"font-family: Verdana; font-size: small;\">Chocolate flakes or demerara (raw) sugar, to coat<\/span><\/li>\n<\/ul>\n<p><b><span style=\"font-family: Verdana; font-size: small;\">Method:<\/span><\/b><\/p>\n<p><span style=\"font-family: Verdana; font-size: small;\">Preheat the oven to 180\u00b0C\/350\u00b0F\/Gas 4. Cream the butter and sugar together until light and fluffy, then beat in the egg. Stir in the flour and cocoa powder to make a firm dough.<\/span><\/p>\n<p><span style=\"font-family: Verdana; font-size: small;\">Roll the dough out to a thickness of 6 mm\/\u00bc inch on baking parchment. Using a 7.5 cm\/3 inch plain round biscuit (cookie) cutter, stamp out 24 rounds and place on the prepared baking sheets. Alternatively cut into squares or rectangles of equal size. Bake the cookies for about 15 minutes. Set aside on the baking sheets to cool.<\/span><\/p>\n<p><span style=\"font-family: Verdana; font-size: small;\">To make the ice cream cookies, spread 2 good spoonfuls of softened ice cream on a cookie and press a second on top. Squeeze so the filling reaches the edges.<\/span><\/p>\n<p><span style=\"font-family: Verdana; font-size: small;\">Put your chosen coating on a plate and roll the cookies in it to coat the sides. Either eat straight away or wrap individually in foil and freeze.
