They are ideal to be served on their own especially for an afternoon tea time. Easy to make and not much ingredients involved.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>50 g\/2 oz\/\u00bd cup plain (all-purpose) four<\/li>\n<li>15 ml\/1 tablespoon instant coffee powder<\/li>\n<li>2 eggs<\/li>\n<li>75 g\/3 oz\/scant \u00bd cup caster (superfine) sugar<\/li>\n<\/ul>\n<p><strong>For the filling:<\/strong><\/p>\n<ul>\n<li>115 g\/4 oz\/\u00bd cup low-fat soft cheese<\/li>\n<li>40 g\/1\u00bd oz\/\u00bc cup chopped preserved stem ginger<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<p>Preheat the oven to 190\u00b0C\/365\u00b0F\/Gas 5. Line two baking sheets with baking parchment. Sift the flour and coffee powder together. To make the filling, beat together the soft cheese and stem ginger. Chill.<\/p>\n<p>Whisk the eggs and sugar in a bowl until thick. Carefully add the sifted flour and coffee powder to the egg mixture and gently fold in with a metal spoon, being careful not to knock out any air.<\/p>\n<p>Spoon into a piping (pastry) bag with a 1cm\/\u00bd inch plain nozzle. Pipe 4 cm\/1\u00bd inches rounds on to the baking sheets. Bake for 12 minutes. Cool.
