It&#8217;s traditionally baked in a ring mould and served in slices.<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredients:<\/strong><\/span> (Serves 8)<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>For the cake:<\/strong><\/span><\/p>\n<ul>\n<li>100 g\/3\u00bd oz all-purpose flour<\/li>\n<li>200 g\/7 oz caster sugar<\/li>\n<li>10 egg whites<\/li>\n<li>1 teaspoon cream of tartar<\/li>\n<li>\u00bd teaspoon vanilla extract<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong>For the icing:<\/strong><\/span><\/p>\n<ul>\n<li>100 g\/3\u00bd oz caster sugar<\/li>\n<li>4 tablespoons water<\/li>\n<li>2 egg whites<\/li>\n<li>2 teaspoons golden syrup<\/li>\n<li>\u00bd teaspoon vanilla extract<\/li>\n<li>Fresh strawberries, to serve<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong>Method:<\/strong><\/span><\/p>\n<p>Preheat the oven to 180\u00baC\/350\u00baF\/Gas mark 4. In a large bowl, sift together the flour and half the sugar three times until very light. Set aside.<\/p>\n<p>In a clean bowl, whisk the egg whites with the cream of tartar until stiff, then gradually whisk in the remaining sugar until thick and glossy. Whisk in the vanilla extract.<\/p>\n<p>Sift half the flour and sugar mixture over the egg whites, then fold it in. Repeat with the remaining flour and sugar mixture. Spoon the batter into a non-stick 25-cm\/10-inch ring mould. Bake for about 40 minutes, or until a skewer inserted into the cake comes out clean. Turn the cake out onto a wire rack and leave to cool.<\/p>\n<p>To make the icing, put the sugar in a small pan with the 4 tablespoons of water. Heat, stirring, until the sugar dissolves, then boil until the temperature reaches 115\u00baC\/240\u00baF. In a clean bowl, quickly whisk the egg whites until very stiff, then gradually pour the hot syrup into the egg whites in a thin stream, whisking continuously until thick and glossy. Whisk in the golden syrup and vanilla extract. Continue whisking until the icing is cooled, then spread over the cake.
