It&#8217;s also a great way to use up very ripe bananas that you think are a bit too soft to eat.<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredients:<\/strong><\/span> (Serves 8)<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>For the cake:<\/strong><\/span><\/p>\n<ul>\n<li>2 ripe bananas<\/li>\n<li>2 eggs<\/li>\n<li>175 ml\/6 fl oz vegetable oil<\/li>\n<li>3 tablespoons milk<\/li>\n<li>300 g\/10\u00bd oz light brown sugar<\/li>\n<li>150 g\/5\u00bd oz self-raising flour<\/li>\n<li>1 teaspoon ground cinnamon<\/li>\n<li>\u00bd teaspoon ground ginger<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong>For the icing:<\/strong><\/span><\/p>\n<ul>\n<li>200 g\/7 oz cream cheese<\/li>\n<li>85 g\/3 oz icing sugar, sifted<\/li>\n<li>1 teaspoon lemon juice<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong>Method:<\/strong><\/span><\/p>\n<p>Preheat oven to 180\u00baC\/350\u00baF\/Gas Mark 4. Grease a 20-cm\/8-inch round cake tin, then line the bottom with greseproof paper.<\/p>\n<p>Roughly mash the bananas in a large bowl, then beat in the eggs. Stir in the oil and milk. Break up any lumps in the brown sugar, then stir it into the banana mixture until well combined. Sift the flour and spices over the mixture, then fold in.<\/p>\n<p>Tip the mixture into the prepared tin. Bake for 1 hour until a skewer inserted in the center comes out clean.
