Whenever I bake a treat, I like it to be a special one like this. The creamy filling gives traditional peanut butter cookies a new twist.<\/p>\n
Ingredients:<\/strong><\/span> (Yield: 44 sandwich cookies)<\/p>\n For the filling:<\/strong><\/p>\n Method:<\/strong><\/span><\/p>\n In a large bowl, cream the shortening, peanut butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla. Combine the flour, baking soda and salt; add to creamed mixture and mix well.<\/p>\n Shape into 1-inch balls and place 2 inches apart on ungreased baking sheets. Flatten to 3\u20448-inch thickness with fork. Bake at 375\u00b0 for 7-8 minutes or until golden. Remove to wire racks to cool.<\/p>\n For filling, in a large bowl, beat peanut butter, confectioners’ sugar, vanilla and enough milk to achieve spreading consistency.
