Almond Pastries Recipe

Ingredients: Makes 24

450 g/1 lb/2 cups caster (superfine) sugar
450 g/1 lb/4 cups ground almonds

6 eggs, lightly beaten
5 ml/1 tsp vanilla essence (extract)

75g/3 oz pine nuts

Method:

Mix together the sugar, ground almonds, eggs and vanilla essence until well blended. Spoon into a greased and lined 30 x 23 cm/12 x 9 in baking tray and sprinkle with the pine nuts. Bake in a preheated oven at 180°C/350°F/ gas mark 4 for 1 hours until browned and firm to the touch. Cut into squares.
