Microwave Fig Bread Recipe

Ingredients: Makes one 675 g / 1.5 lb loaf

100 g/4 oz bran
50 g/2 oz soft brown sugar

45 ml/3 tbsp clear honey
100 g/4 oz dried figs, chopped

50 g/2 oz hazelnuts, chopped

300 ml milk
100 g/4 oz/1 cup wholemeal (wholewheat) flour
10 ml/2 tsp baking powder
A pinch of salt

Method:

Mix together all the ingredients to a stiff dough. Shape into a microwave loaf dish and level the surface. Cook on High for 7 minutes. Leave to cool in the dish for 10 minutes, then turn out on to a wire rack to finish cooling.
