Microwave Date Bars Recipe

Ingredients: Makes 12

150 g/5 oz self-raising (self-raising) flour
175 g/6 oz caster (superfine) sugar
100 g/4 oz desiccated (shredded) coconut
100 g/4 oz stoned (pitted) dates, chopped
50 g/2 oz chopped mixed nuts

100 g/4 oz butter or margarine, melted
1 egg, lightly beaten
Icing (confectioners') sugar for dusting

Method:

Mix together the dry ingredients. Stir in the butter or margarine and egg and mix to a firm dough. Press into the base of a 20 cm/8 in square microwave dish and microwave on Medium for 8 minutes until just firm. Leave in the dish for 10 minutes, then cut into bars and turn out on to a wire rack to finish cooling.
