Pumpkin Cake Recipe

Ingredients: Makes one 23 x 33 cm/9 x 13 in cake

450 g/1 lb/2 cups caster (superfine) sugar
4 eggs, beaten
375 ml/13 fl oz/1.5 cups oil

350 g/12 oz/3 cups plain (all-purpose) flour
15 ml/1 tbsp baking powder
10 ml/2 tsp bicarbonate of soda (baking soda)
10 ml/2 tsp ground cinnamon

2.5 ml/0.5 tsp ground ginger

A pinch of salt
225 g/8 oz diced cooked pumpkin

100 g/4 oz/1 cup walnuts, chopped

Method:

Beat together the sugar and eggs until well blended, then beat in the oil. Mix in the remaining ingredients. Spoon into a greased and floured 23 x 33 cm/9 x 13 in baking tin (pan) and bake in a preheated oven at 180°C/350°F/gas mark 4 for 1 hour until a skewer inserted in the centre comes out clean.
