Carrot and Banana Cake Recipe

Ingredients: Makes one 20 cm/8 in cake

175 g/6 oz carrots, grated
2 bananas, mashed
75 g/3 oz/0.5 cup sultanas (golden raisins)
50 g/2 cup chopped mixed nuts

175 g/6 oz/1.5 cups self-raising (self-rising) flour
5 ml/1 tsp baking powder
5 ml/1 tsp ground mixed (apple-pie) spice
Juice and grated rind of 1 orange

2 eggs, beaten
75 g/3 oz/0.5 cup light muscovado sugar

100 ml/3.5 fl oz/scant 0.5 cup sunflower oil

Method:

Mix together all the ingredients until well blended. Spoon into a greased and lined 20 cm/8 in cake tin (pan) and bake in a preheated oven at 180°C/350°F/gas mark 4 for 1 hour until a skewer inserted in the centre comes out clean.
