Sand Cake Recipe

Ingredients: Makes one 20 cm/8 in cake

75 g/3 oz/⅓ cup butter or margarine, softened

75 g/3 oz/⅓ cup caster (superfine) sugar

2 eggs, lightly beaten

100 g/4 oz/1 cup cornflour (cornstarch)

25 g/1 oz/ cup plain (all-purpose) flour

5 ml/2 oz/ cup chopped mixed nuts


Cream together the butter or margarine and sugar until light and fluffy. Gradually beat in the eggs, then fold in the cornflour, flour and baking powder. Spoon the mixture into a greased 20 cm/8 in sqare cake tin (pan) and sprinkle with the chopped nuts. Bake in a preheated oven at 180C/350F/gas mark 4 for 1 hour until springy to the touch.
