Method:
Beat together the sugar, egg whites and
egg for 10 minutes. Gradually beat in the flour and stir in the anise.
Spoon the mixture into a 450 g/1 lb loaf tin (pan) and bake in a
preheated oven at 180°C/350°F/gas mark 4 for 35 minutes until a skewer
inserted in the centre comes out clean. Remove from the tin and cut
into 1 cm/0.5 in slices. Place the biscuits (cookies) on their sides
on a greased baking (cookie) sheet and return to the oven for a
further 10 minutes, turning half-way through cooking.
