Almond and Chocolate Cookies Recipe

Ingredients: Makes 24

50 g/2 oz butter or margarine, softened
75 g/3 oz caster (superfine) sugar
1 small egg, beaten
100 g/4 oz/1 cup plain (all-purpose) flour
2.5 ml/0.5 tsp baking powder
25 g/1 oz ground almonds

25g/1 oz plain (semi-sweet) chocolate, grated

Method:

Cream together the butter or margarine and sugar until light and fluffy. Gradually beat in the egg, then stir in the remaining ingredients to make a fairly stiff dough. If the mixture is too moist, add a little more flour. Wrap in clingfilm (plastic wrap) and chill for 30 minutes.


Roll the dough into a cylinder shape and cut into 1 cm/0.5 in slices. Arrange, well apart, on a greased baking (cookie) sheet and bake in a preheated oven at 190C/ 375F/gas mark 5 for 10 minutes.
