Almond Biscuits Recipe

Ingredients: Makes 24

100 g/4 oz/0.5 cup butter or margarine, softened
50 g/2 oz caster (superfine) sugar
100 g/4 oz/1 cup self-raising (self-rising) flour
25 g/1 oz ground almonds

A few drops of almond essence (extract)

Method:

Cream together the butter or margarine and sugar until light and fluffy. Work in the flour, ground almonds and almond essence to a stiff mixture. Shape into large walnut-sized balls and arrange well apart on a greased baking (cookie) sheet, then press down lightly with a fork to flatten. Bake the biscuits (cookies) in a preheated oven at 180C/350F/gas mark 4 for 15 minutes until golden brown.
