Method:
Cream together the butter or margarine
and sugar until light and fluffy. Work in the flour, ground almonds
and almond essence to a stiff mixture. Shape into large walnut-sized
balls and arrange well apart on a greased baking (cookie) sheet, then
press down lightly with a fork to flatten. Bake the biscuits (cookies)
in a preheated oven at 180°C/350°F/gas mark 4 for 15 minutes until
golden brown.
