Milk Sponge Cake Recipe

Ingredients: Makes one 20 cm / 8 in cake

150 ml milk

3 eggs
175 g/6 oz caster (superfine) sugar
5 ml/1 tsp lemon juice

350 g/12 oz/3 cups plain (all-purpose) flour
5 ml/1 tsp baking powder

Method:

Heat the milk in a pan. Beat the eggs in a bowl until thick and creamy, then add the sugar and lemon juice. Pour in the flour and baking powder, then gradually beat in the hot milk until smooth. Spoon into a greased 20 cm/8 in cake tin (pan) and bake in a preheated oven at 180C/350F/gas mark 4 for 20 minutes until well risen and springy to the touch.
