Potato Scones Recipe

Ingredients: Makes 12

50 g/2 oz butter or margarine

225 g/8 oz/2 cups self-raising (self-rising) flour
A pinch of salt
175 g/6 oz cooked mashed potato
60 ml/4 tbsp milk

Method:

Rub the butter or margarine into the flour and salt. Stir in the mashed potato and enough of the milk to make a soft dough. Roll out on a lightly floured surface to about 2.5 cm/1 in thick and cut into rounds with a biscuit (cookie) cutter. Place the scones (biscuits) on a lightly greased baking (cookie) sheet and bake in a preheated oven at 200C/400F/gas mark 6 for 1520 minutes until lightly golden.
