Orange and Raisin Scones Recipe

Ingredients: Makes 12

50 g/2 oz butter or margarine

225 g/8 oz/2 cups plain (all-purpose) flour
2.5 ml bicarbonate of soda (baking soda)
100 g/4 oz raisins
5 ml/1 tsp grated orange rind
60 ml/4 tbsp orange juice
60 ml/4 tbsp milk
Milk to glaze


Rub the butter or margarine into the flour and bicarbonate of soda, then stir in the raisins and orange rind. Work in the orange juice and milk to make a soft dough. Roll out on a lightly floured surface to about 2.5 cm/1 in thick and cut into rounds with a biscuit (cookie) cutter. Place the scones (biscuits) on a greased baking (cookie) sheet and brush the tops with milk. Bake in a preheated oven at 200C/400F/gas mark 6 for 15 minutes until lightly browned.
