Muesli Scones Recipe

Ingredients: Makes 8 wedges

100g/4 oz/1 cup muesli
150 ml water
50 g/2 oz butter or margarine

100 g/4 oz/1 cup plain (all-purpose) or wholemeal (wholewheat) flour

10 ml/2 tsp baking powder
50 g/2 oz raisins
1 egg, beaten

Method:

Soak the muesli in the water for 30 minutes. Rub the butter or margarine into the flour and baking powder until the mixture resembles breadcrumbs, then stir in the raisins and soaked muesli and mix to a soft dough. Shape into a 20 cm/8 in round and flatten on to a greased baking (cookie) sheet. Cut partially through into eight sections and brush with beaten egg. Bake in a preheated oven at 230°C/450°F/gas mark 8 for about 20 minutes until golden.
