Herby Scones Recipe

Ingredients: Makes 8

175 g/6 oz butter or margarine

225 g/8 oz/2 cups strong plain (bread) flour
15 ml/1 tsp baking powder
A pinch of salt
5 ml/1 tsp soft brown sugar
30 ml/2 tbsp dried mixed herbs
60 ml/4 tbsp milk or water
Milk for brushing

Method:

Rub the butter or margarine into the flour, baking powder and salt until the mixture resembles breadcrumbs. Stir in the sugar and herbs. Add enough of the milk or water to make a soft dough. Roll out on a lightly floured surface to about 2 cm or 3/4 in thick and cut into rounds with a biscuit (cookie) cutter. Place the scones (biscuits) on a greased baking (cookie) sheet and brush the tops with milk. Bake in a preheated oven at 200C/400F/gas mark 6 for 10 minutes until well risen and golden brown.
