Date Scones Recipe

Ingredients: Makes 12

225 g/8 oz/2 cups wholemeal (wholewheat) flour
2.5 ml/0.5 tsp bicarbonate of soda (baking soda)
2.5 ml cream of tartar
2.5 ml/0.5 tsp salt
40 g/1.5 oz/3 tbsp butter or margarine

15 ml/1 tbsp caster (superfine) sugar

100 g/4 oz stoned (pitted) dates, chopped
About 100 ml/3.5 fl oz/6.5 tbsp buttermilk


Mix together the flour, bicarbonate of soda, cream of tartar and salt. Rub in the butter or margarine, then stir in the sugar and dates and make a well in the centre. Gradually mix in just enough of the buttermilk to make a medium-soft dough. Roll out thickly and cut into triangles. Place the scones (biscuits) on a greased baking (cookie) sheet and bake in a preheated oven at 230C/450F/gas mark 8 for 20 minutes until golden.
