225 g/8 oz/2 cups plain (all-purpose)

5 ml/1 tsp bicarbonate of soda (baking soda)
5 ml/1 tsp cream of tartar
A pinch of salt
250 ml/8 fl oz/1 cup buttermilk
Method:
Rub the lard into the flour, bicarbonate
of soda, cream of tartar and salt until the mixture resembles
breadcrumbs. Stir in the milk and mix to a soft dough. Roll out on a
lightly floured surface to 1 cm/0.5 in thick and cut out with a
biscuit (cookie) cutter. Place the biscuits (crackers) on a greased
baking (cookie) sheet and bake in a preheated oven at 230°C/450°F/gas
mark 8 for 10 minutes until golden.
