Method:
Mix together the butter or margarine and
biscuit crumbs and press into the base and sides of a 23 cm/9 in
microwave flan dish. Microwave on High for 1 minute. Leave to cool.
Beat together the cream cheese, eggs, lemon rind and juice and sugar
until smooth. Stir in the pineapple and spoon into the base. Microwave
on Medium for 6 minutes until firm. Leave to cool.
Whip the cream until stiff, then pile on top of the cheesecake.
