Microwave Fruit Cake Recipe

Ingredients: Makes one 18 cm / 7 in cake

175 g/6 oz butter or margarine, softened
175 g/6 oz caster (superfine) sugar
Grated rind of 1 lemon
3 eggs, beaten
225 g/8 oz/2 cups plain (all-purpose) flour
5 ml/1 tsp ground mixed (apple-pie) spice
225 g/8 oz raisins
225 g/8 oz sultanas (golden raisins)
50 g/2 oz glace (candied) cherries
50 g/2 oz chopped mixed nuts

15 ml/1 tbsp golden (light corn) syrup

45 ml/3 tbsp brandy

Method:

Cream together the butter or margarine and sugar until light and fluffy. Mix in the lemon rind, then gradually beat in the eggs. Fold in the flour and mixed spice, then mix in the remaining ingredients. Spoon into a greased and lined 18 cm/7 in round microwave dish and microwave on Low for 35 minutes until a skewer inserted in the centre comes out clean. Leave to cool in the dish for 10 minutes, then turn out on to a wire rack to finish cooling.
