Method:
Beat together the egg whites, sugar,
cream of tartar, water and salt in a heatproof bowl set over a pan of
gently simmering water for about 5 minutes until stiff peaks form.
Remove from the heat and beat in the vanilla essence. Use to sandwich
together the cake, then spread the remainder over the top and sides of
the cake.
