Fluffy White Frosting Recipe

Ingredients: Makes enough to fill and cover one 23 cm / 9 in cake

2 egg whites
350g/12 oz caster (superfine) sugar
A pinch of cream of tartar
75 ml/5 tbsp cold water
A pinch of salt
5 ml/1 tsp vanilla essence (extract)

Method:

Beat together the egg whites, sugar, cream of tartar, water and salt in a heatproof bowl set over a pan of gently simmering water for about 5 minutes until stiff peaks form. Remove from the heat and beat in the vanilla essence. Use to sandwich together the cake, then spread the remainder over the top and sides of the cake.
