Caramel Frosting Recipe

Ingredients: Makes enough to fill and cover one 23 cm / 9 in cake

100 g/4 oz butter or margarine

225g/8 oz/1 cup soft brown sugar

60 ml/4 tbsp milk
350g/12 oz/2 cups icing (confectioners') sugar, sifted

Method:

Melt the butter or margarine and sugar over a low heat, stirring continuously until blended. Stir in the milk and bring to the boil. Remove from the heat and leave to cool. Beat in the icing sugar until you have a spreading consistency.
