Makes enough to cover one 23 cm / 9 in cake
225 g/8 oz/1 cup soft brown sugar
1 egg white
30 ml/2 tbsp water
5 ml/1 tsp vanilla essence (extract)
Beat together the sugar, egg white and
water in a heatproof bowl set over a pan of gently simmering water.
Continue to beat for up to 10 minutes until the mixture thickens and
forms stiff peaks. Remove from the heat and add the vanilla essence.
Continue to beat until of a spreading consistency.
