Ingredients:
Covers the top and sides of one 23 cm / 9 in cake
225 g/8 oz/2 cups ground almonds
225 g/8 oz/14 cups icing
(confectioners') sugar, sifted
225 g/8 oz/1 cup caster (superfine) sugar
2 eggs, lightly beaten
10 ml/2 tsp lemon juice
A few drops of almond essence (extract)
Method:
Beat together the almonds and sugars.
Gradually blend in the remaining ingredients until you have a smooth
paste. Wrap in clingfilm (plastic wrap) and chill before use.
