Eggless Overnight Fruit Cake Recipe

Ingredients: Makes one 20 cm / 8 in cake

50 g/2 oz butter or margarine

225 g/8 oz self-raising (self-rising) flour
5 ml/1 tsp bicarbonate of soda (baking soda)
5 ml/1 tsp grated nutmeg
5 ml/1 tsp ground mixed (apple-pie) spice
A pinch of salt
225 g/8 oz dried mixed fruit (fruit cake mix)
100 g/4 oz soft brown sugar

250 ml/8 fl oz/1 cup milk

Method:

Rub the butter or margarine into the flour, bicarbonate of soda, spices and salt until the mixture resembles breadcrumbs. Mix in the fruit and sugar, then stir in the milk until all the ingredients are well blended. Cover and leave overnight.


Spoon the mixture into a greased and lined 20 cm/8 in cake tin (pan) and bake in a preheated oven at 180C/350F/gas mark 4 for 1 3/4 hours until a skewer inserted in the centre comes out clean.
