Chocolate Banana Loaf Recipe

Ingredients: Makes one 900 g / 2 lb loaf

150 g/5 oz butter or margarine

150 g/5 oz soft brown sugar
150 g/5 oz plain (semi-sweet) chocolate
2 bananas, mashed
3 eggs, beaten
200 g/7 oz plain (all-purpose) flour
10 ml/2 tsp baking powder


Melt the butter or margarine with the sugar and chocolate. Remove from the heat, then stir in the bananas, eggs, flour and baking powder until smooth. Spoon into a greased and lined 900 g/2 lb loaf tin (pan) and bake in a preheated oven at 150C/300F/gas mark 3 for 1 hour until springy to the touch. Leave to cool in the tin for 5 minutes before turning out to finish cooling on a wire rack.
